Winter Warmer: Sweet Potato Soup
Hello All. To celebrate the rapid onset of wintery conditions (photo: friday morning) I offer to my readers my first (of many!) online recipe. I made this soup last night and brought it to work for myself and fellow worker this morning in my *Thermos*. It is so bloody delicious that I spontaneously decided to put it up on the blog. Enjoy. Note: to all my Australian readers: I know you poor dears are experiencing some horrid 32 degree sunny weather at the moment - perhaps you can serve the following chilled.
Curried Sweet Potato Soup
- 2 sweet potatos
- a clove of garlic
- a small onion
- a thumb of ginger
- 150ml of fresh cream
- 1 tablespoon or 2 of Korma Curry Paste (I used Sharwoods)
- 600ml of Stock
- a 440ml can of chickpeas
In a large heavy based saucepan fry the minced onion and garlic in a bit of olive oil until translucent. Add the curry paste and fry until lovely and fragrant - about 2 minutes or so. Grate the piece of ginger into saucepan and add in the sweet potato that's been chopped into inch sized cubes. Turn the heat down, pop on the lid and let it sweat a bit - maybe 8-10 minutes. Finally add in the stock, chickpeas and cream. Bring it back up to simmer and let it meld away for an hour so.
After its cooled a bit whiz it all up until mostly smooth, leaving in a few chunks of sweet potato is good for the texture though... Serve with a few slices of bread. Super.
